At Ideal Spanish Mexico, our year-end celebrations usually smell like tamales, mole, or pozole. After all, sharing the richness of Mexican gastronomy is part of our DNA. However, this year felt different. As we gathered to bid farewell to another wonderful year, our table looked a little more… Alpine.
The Swiss Connection
Over the years, IDEAL has become more than just a language school; it has become a bridge between cultures. We have developed a particularly deep bond with Switzerland. What started as professional connections with Swiss students has blossomed into lifelong friendships and even family ties for the Brito family.
Through these “Helvetic” bonds, we’ve adopted a tradition that perfectly suits the crisp, cool December air in Cuernavaca: The Raclette.
Adapting the Dish: The “Mexican Raclette”
While we love the Swiss tradition, we believe in making every recipe our own. Traditional Swiss raclette cheese can be quite a luxury in Mexico, so we embraced the spirit of fusion.
We swapped the imported wheels for a high-quality, local Manchego-style cheese—renowned for its perfect melt and creamy texture. From there, the “Mexicanization” truly began. While a traditional Swiss table might stick to potatoes and pickles, our grill was a vibrant explosion of local flavors:
The result? A Mexican Raclette that honors its European roots while celebrating the ingredients of our land.

More Than Just Food: The Spirit of “Compartir”
The true magic of raclette isn’t just the melted cheese; it’s the ritual. It is a slow meal. It’s the time spent chopping ingredients together, the patient wait for the cheese to bubble under the broiler, the clinking of wine glasses, and the endless conversation.

People often think that students come to us only to learn about Mexican Spanish and culture. But this celebration reminds us that our students influence us just as much as we influence them. We don’t just end the term with a list of graded exams; we end it with new perspectives, new traditions, and new members of our extended international family.
